Foodie Fridays: Quickie Buns!!

Hey Humble Readers...

I hope that you've all had a good week.  Things in our little hobbit-hole have been challenging, but productive.  Ginny's most recent very long drawn out round of teething has finally resulted in something... her first molar!  While she's teething, she seems to be much more likely to get herself into trouble like messing with Mommy's books, destroying the shoe rack, or pushing all the buttons on the dvr.  Today she actually managed to almost post on my blog.  She pushed a bunch of random keys on my netbook and when I got back to the computer, there was a new post started, all gibberish (not that that's so different from what I post, but still...).  She alternated between particularly mischievous and completely inconsolable this morning, but after her nap she was a much much happier wee girl.  And there was a shiny new tooth! 

But somehow, in the midst of dealing with a truly unhappy toddler, I managed to make these buns the other day.  I've actually made them a few times, and I've loved them every single time.  The original recipe called these "30 Minute Rolls" but if you do the math on the times quoted, it actually adds up to 35 minutes.  Combine that with the fact that I tweaked the baking time a bit, and well, 'quickie buns' just works.  AND considering that these are yeast rolls, anything less than two hours is pretty gosh darn awesome!

Quickie Buns

1 cup + 2 tbsp warm water (I heat mine in the microwave for about 40 seconds)
1/3 cup canola or olive oil
2 tbsp fast acting yeast
1/4 cup sugar (do not sub in Spl.enda... I learned this the hard way)
1 tsp salt
1 egg
3 1/2 cup flour

Preheat your oven to 400F, and grease/spray a 9x13 baking pan.  In your mixer bowl combine the water, oil, yeast and sugar and allow it to rest for 15 minutes. Using your dough hook, mix in the salt, egg and flour. Knead with hook until will incorporated and dough is soft and smooth, 2-3 minutes. (Honestly, I don't know how long to knead the dough for if you don't have a mixer with a dough hook... I'm sorry.  I'm a bit dense when it comes to baking.)

They aren't very evenly sized. 
Form dough into 12 balls, place in prepared pan, and allow to rest, covered with a towel, for 10 minutes. Bake for 15-17 minutes.

Like I mentioned previously, the original recipe called for the rolls to be baked for 10 minutes, but I found that they came out too pale and doughy for me.  Keep an eye on them as they bake... everyone's oven is different.

was a bit chewier than usual, but they were still great.

Foodie Friday: Super-Sticky-Caramelly Monkey Bread

Hey Humble Readers...

Summer has finally arrived on the flatland, and because it's been super warm this week (warm for us is probably luke-warm for some of my readers further south, but without a/c, I'm just a big ol' puddle) I haven't been doing a lot of cooking.  So, that means you all are getting a recipe that I've been hanging onto for a while. 

This is super yummy with breakfast, brunch, snacking, or dessert, and it's so simple you wouldn't even believe it. 

You can use whatever basic white bread recipe you like.  If you have a bread-maker, just throw all the ingredients (in manufacturer's recommended order) use the dough cycle and let the machine to do the hard work.

Super-Sticky-Carmelly Monkey Bread

Bread:
2 1/2 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon salt
1/4 cup white sugar
2 tablespoons butter, softened
1 cup water

Sauce:
1 1/2 cup butter
1 1/2 cup packed brown sugar
1 teaspoon cinnamon
1 cup raisins, soaked so they are plump

Place all bread ingredients into the bread-maker in order suggested by the manufacturer (mine is liquids on the bottom, then dry, topped with yeast).  Run a dough cycle.  When bread machine is almost finished, melt butter in a small saucepan over low heat.  Stir in brown sugar and cinnamon, and keep stirring until sugar disolves.  Add raisins to sauce and remove from the heat.  When the bread machine cycle is complete, remove dough to a floured surface.  If the dough is a bit sticky you may need to knead it a few times with a sprinkle of flour.  Tear or cut into 1 inch chunks.  Dip chunks of dough into butter sugar sauce to coat (your fingers will get sticky!).  Layer the chunks in a greased bundt pan.  When all the dough has been chunked, dunked, and stacked in the pan, pour any remaining sauce evenly over the dough.  Allow the dough to rise in a warm spot for 15-20 minutes, then bake in a preheated 375F for 20-25 minutes until golden.  Remove from oven and invert onto a plate.  Serve warm.
 
You can also throw some nuts into this recipe, if you like.  It's super yummy either way!

Hobbit-ish Potpurri: Melting, Voting & Baking, Oh My!

Good Morning Humble Readers...

Things here on the flatland are pretty good this morning.  The weatherman is predicting that we are supposed to be getting closer to seasonal temps, which means that some of this might actually melt...

Yup, those icicles are all around my house.  Talk about frightening!  (and I think the condo board should have had the eaves cleaned out, huh?)  The weatherman is, of course, predicting that we will get another 10cm of snow next weekend, but I'm choosing to ignore that for the moment.

So, I'm not sure if my friends south of the border have heard, but as of Friday, we are being sent to the polls AGAIN!  The joys of electing a minority goverment repeatedly.  Gah!  One thing I have to say I like about Canadian elections though... There are very specific limitations on how long the campaign actually lasts (36 days).  I just hope that we get a clear majority this time, so that maybe the government can get something done and we don't have to do this again for another four or five years.

Remember how I mentioned yesterday that I was going to be baking some buns to go with dinner?  I have a great recipe for dinner rolls that I love.  But please keep in mind that my baking skills are less than stellar.  On a whim I decided to substitute whole wheat flour for the all-purpose that the recipe called for.  Um... yeah... can we say bad idea?  They turned into hockey pucks.  Oh well, lesson learned.  Have you had any kitchen flubs recently?

Ginny has turned into a drool monster!  It's like someone has turned on a faucet or something.  It looks like teething is just around the corner.  What's really funny is that my Beloved gets seriously grossed out by it.  It's hilarious!

Foodie P*O*R*N

Hey Humble Readers...

I have a bunch of food pics that I have been wanting to share, but I have gotten behind.  I've been doing a lot of experimenting and trying of new recipes lately.  So here, for your viewing pleasure...

Monkey Bread

A basic bread dough, formed into balls, then dipped in a butter-brown sugar-cinnamon sauce
(with a sprinkling of golden raisins), stacked in a bundt pan & baked.  YUM!
My first attempt at Homemade Pizza (pepperoni, mushroom & spinach)

This dough recipe called for half a can of beer... can't go wrong with that!
Creamy Chicken Turnovers

Puff pastry, stuffed with shredded chicken breast, scallions & cream cheese!
Pizza Pinwheels

Refridgerator dough topped with your favourite pizza fixin's and rolled.
Wing Platter - Asian Sesame Wings, Crunchy Parmesean Wings, Honey Mint Wings

The honey mint wings were a new recipe, and disappointing.  But the other
two types totally rock and are amazingly easy!
And even though I don't have a picture of it, I have to tell you about tonight's dinner... the Fake Out Coq Au Vin.  I got the recipe from the Rac.hael R.ay magazine... so simple and soooo good!  Chicken breasts, mushrooms, onion, red wine... like I said, super simple and it tasted amazing!

I know it's lame to show you the pics without the recipes, but I'm a tired hobbit.  Let me know which ones you're interested in and I will break it down for you!

Hobbit-ish Potpurri: Randomness & Updates

Good Morning Humble Readers!

So, I have a question... what are the odds that Ginny's first word is going to be 'gesundheit'?  The poor wee girl has been sneezing up a storm.  Basically, if she's awake, she's sneezing.  At least it's moving that nasty congestion through.  I think she likes the sneezes, because she smiles like crazy after she does it.  And I've become very adept at booger mining (with a tissue of course) in her little nose.  Whoddathunkit?

It took almost three months, but Ginevra has finally learned how to suck her thumb.  She didn't do it in utero, at least not on any of the gazillion ultrasounds I had.  And of course, being my child, she has to do things in the oddest way possible.  To get an idea of how she sucks her thumb, hold your hand in front of your face, palm to nose.  Insert thumb into mouth.  Rest palm on tip of nose.  Keep fingers extended.  Tap fingers on eyelids and forehead.

Thank you to everyone who responded to my last post.  For the time being, I'm not going to go see her.  Call it chickening out, but I decided to use my lingering cold as the reason.  They don't allow people with colds into the ICU, right?  Right?  (I never claimed to be a brave person.)  I called and checked in with the nurses last night, and she's responding well to treatment and they are hoping to wean her from the ventilator sometime today or tomorrow.  They have my number at the nurses station if anything changes drastically.  At this point, I'm hoping that she recovers to a point where she can be transferred back to the little hospital in the town where she lives.

I made some buns yesterday that I'm pretty proud of.  They taste really great, even if they don't look all that perfect.  I'm still really new to bread baking, but I never guessed how hard it is to shape dough.  First the pizza, now buns.  Anyone care to share some tips?  (And how do I keep myself from binging on fresh baked bread?)

More Randomness & Some Pics

Howdy Humble Readers...

Because there are still so many things to bring you up to date on, I'm going to continue in a hobbit-ish potpurri type format.  Hope you all don't mind...

Ginevra has the worst case of baby acne I've ever seen.  We're supposed to have some professional photos taken next week, and I'm hoping that the spots are at least down to a dull roar by then.  Interesting to note... mommy has also started to break out again, for the first time in 8 months or so.  Connected? Perhaps...

That cake I mentioned the other day... OMG!  It turned out soooooo good.  And it was super easy.  For someone like me who is baking-challenged, it is by far the best cake recipe ever!  And the recipe is totally alterable, which you can never really do with baked goods.  Love it!  Here's a pic...

The only thing that didn't really work out was the ganache I made as a glaze.  I wasn't thinking and used half & half rather than heavy cream, and the ganache didn't turn out very smooth.  Still tasted great tho...

We're heading to K-town to visit my family at the beginning of next month.  Ginny's first airplane ride... I hope and pray we don't end up being 'that' family with the ubiquitous screaming baby on the plane.  And I'm also praying that the week before we have to drive to Calgary (the airport) we get a nice big chinook.  Bonus hobbit points for anyone not from western Canada who knows what a chinook is!  (no cheating and looking it up online!)

Big news in this hobbit's world... New Kids On The Block are coming to Edmonton again!  Woohooo!  The teenage girl that still lives in a small corner of my heart is ecstatic!  Hopefully my sister and I will be able to go.  Yes, I am that big of a geek, but you all knew that...  (and if you didn't know, let me tell you about when we camped out for tickets when we were in highschool...)

Something to ponder... I'm still on the Zan.tac that I was put on during pregnancy.  I've tried unsuccessfully to wean myself off it a few times.  Every time I'm stop taking it completely the heartburn comes back, and surprisingly, I get an IBS flare.  Can an antacid control IBS?  Hmm...

If I continue losing weight, I'm going to have to take my rings in to be sized.  And I seriously need to do some shopping... I have exactly two pairs of pants that fit, and I don't like either one.

Hobbit-ish Potpurri: A Bit of This & That

Greetings Humble Readers!

Thank you so much for your compliments on the nursery.  I'm really happy with how everything came out.  I like to go in and just stand in the room and daydream.

Today has been a day of extremes.  Extreme laziness, in that we decided to stay snuggled up in bed rather than go to church this morning.  We woke up to more snow, and it just felt like a good day to stay under the covers.  It has also been extremely productive.  This afternoon I baked 21 dozen pfefferneusse.  I did something I have never done before, and altered my recipe a little (used some whole wheat flour, and used splen.da in place of sugar).  They turned out well, which made me happy.

Today has also been productive in that I had my Beloved pull out the Christmas decorations.  We are going to get the tree set up tonight after dinner, and I'm going to work on decorating the house over the next couple of days.  I know it's early, but I figure with a newborn in the house, I'm not going to be all that into decorating in a week or so.

Bad news of the automotive variety.  We discovered that our lovely Tilly (the Prius) does not have a block heater.  Now, I know that many of you who don't live north of the 49th parallel haven't a clue what I'm talking about, but a block heater is essential (basically you plug the heater in and it keeps the oil from freezing) in this cold climate.  Of course we didn't think to ask about it when we bought the car in July, because really, WHO THE H-E-DOUBLE-HOCKEY-STICKS SELLS A CAR IN CANADA WITHOUT A BLOCK HEATER?!?!?!?  The car is three, almost four years old, where has it been up until now?  The bottom line is we are going to have to play roulette with the cold weather or shell out $250 to have one installed.  And the likelihood of being able to get one installed this week... slim to none.  So, we are seriously hoping that the weatherman is wrong and that we won't hit -30 in the next couple of days.  Argh!

Today was the Western Conference Final in the CFL.  The Saskatchewan Roughriders were playing the Calgary Stampeders, in Calgary, at McMahon Stadium... an outdoor stadium.  It's snowing.  It's -18, but feels like -29 with the wind.  You can certainly tell that the cold was getting to the players.  The lead bounced back and forth, and it stayed really close the whole way through, but the game just ended at 20-16 for the Riders!  The whole game hinged on two plays.  Incredible game!  It looks like we will have a rematch of last year's Grey Cup between Saskatchewan and Montreal.  Woohoo!  Next Sunday... Grey Cup... in Edmonton.  Let's see how Montreal handles the cold...

Tomorrow's to do's... chiropractor appointment, make shortbread, make meatballs, clean the kitchen and bathroom, work on decorating the house for Christmas, watch a couple HP movies in prep for seeing HP7.   If I get it all done, I'll be VERY surprised.

While I know that it's early yet, I'm starting to get the itch to begin my Christmas baking.  I've spent some time this morning going over my usual recipes (pfefferneusse, shortbread, and peanut butter marshmallow squares), as well as surfing for something new (that will freeze well).  Do you have anything that's a must have for your family in the holiday season?

The Ultrasound, The Nursery, and A Cake

Good Morning Humble Readers!

The ultrasound was a tad bit anti-climactic.  When we got to the medical imaging clinic, it was pretty busy, so I expected to be waiting awhile.  Oddly enough, I got called in right away.  Like the last time I was at this particular clinic, they made my Beloved wait in the waiting room for the first part of the scan. 

When I got into the room, I immediately told the tech that we did not want to know the gender of the baby.  She told me that she would take all her pictures, then show them to the doctor on site.  Then my Beloved would be called in and we would get to see our Halfling. 

I spent the next 20 minutes or so staring at the ceiling and trying not to think about my ever shrinking bladder.  The tech didn't say anything during that 20 minutes, so I was starting to get just a tad concerned.  Then she handed me a strip of three pictures of the Halfling and said that she would go talk to the doc and then bring in my Beloved.  I couldn't see much in the pics she gave me because it was so dim in the room,  She was gone for almost 10 minutes, so I really started to get worried. 

But when she came back in with my Beloved, and started scanning again she immediately said that all that she could see looked great, and that our little Halfling had been playing shy.  Talk about a sigh of relief.  She turned the screen toward us and we got to watch the baby twist around and wave at us.  Halfling gave us some great views of his/her spine and hiney, but kept turning away from the u/s.  We finally got a quick view of the head, then the arms and legs flailing about.  And that was about it. 

Like I said, anticlimactic. 

When we got out of the room, we were able to get a better look at the pics she gave us, and honestly I have to say...

they are the CREEPIEST ultrasound pictures ever!  No cute profile for our Halfling!  No way!  :)  Take a look for yourself...

The first is of Halfling's face... nice skeletal look huh?  Maybe we should have called the baby a Wraith instead.  The second shot is of his/her spine.  Crazy!

It was great to see the baby, to know that all is well.  When we left, on our way out my Beloved looked at me and said, "We made a real person!".  It was really cute.  I think it's starting to become a bit more real for him.

After the u/s, we stopped at the paint store to pick up some paint chips to help us decide on the perfect shade for the nursery.  Tell me what you think...

I'm trying to decide between the top three colours.  I want a soft grey.  Trim and furniture will be white, and the accent colour is going to be a bright apple green (curtains, bedding, etc).

In other news... You remember that recipe that I mentioned yesterday, the one from Kristin at Dragondreamer's Lair?  The one for a Blow the Diet cake...  Yeah, well, it's frickin' outstanding!  I wimped out and used a chocolate cake mix (my scratch cakes never ever turn out), and the next time I make it I will double the peanut butter filling.  I don't pretend to know how to ice a cake properly, so it turned out looking a tad sloppy, but it tasted sooooooo good!  It's calling my name right now, but I am successfully resisting.

Hobbit-ish Potpurri: Spring? FInally?

Good Morning Humble Readers...

I hope you are all doing well this morning.  It's a gorgeous day here on the flatland, blue sky, light breeze and the sun is shining.  Our condo is nice and cool, and everything just seems restful.  This is the spring I have been waiting for.

Pregnancy news: nothing major to report.  My weight has been fluctuating quite a bit, which I guess I should expect because it always has.  It just freaked me out when it went up 4 pounds and stayed up for most of the past week.  Thank you bloating, constipation, and water retension.  It's back down today, thank heaven.  I think I am going to have to get a chain for my wedding rings sooner rather than later, with the puffy fingers and everything.  I find it interesting that the symptoms are still coming and going.  A bit of pukiness, and for the last couple of days the b00bs of wrath have reappeared.  On the random front... my fingernails are growing like mad!  I just wish that they would grow stronger... they've always been on the soft side.

Sadly, it appears that as long as we live in this building, we will not be able to get the pug I have been longing for.  There was a condo board meeting last night and when my Beloved brought up the issue because we really want to have a vote on it, those present all had concerns... concerns that they have never expressed until now.  Grrr! I love our little home, but I am really hoping that sometime in the next couple of years we will be able to sell and move up.

Confession time:  I have a breadmaker that I hardly ever use.  I really want to start making better use of it.  I am baking challenged, so I'm wondering if any of you lovely ladies (or gents if you're lurking) have any fabulous bread or bun recipes?

Why is it that lab techs, nurses and doctors (in my experience) don't listen to their patients?  I had to go for more bloodwork and ended up having 6 vials of blood taken.  Generally, I have pretty good veins.  And I've been through this enough to know which arm and where on the elbow works best.  I told the tech to focus on the middle of the inside of my elbow, as that works best.  Instead she goes for a vein on the outside edge of my arm.  I knew that she wasn't going to get much of anything from that spot, but she kept digging like she was looking for oil.  Finally she gave up and switched to the spot I mentioned, at which point all went swimmingly.  Hmmm, maybe I do know my body?  Now I'm sporting a lovely bruise from her digging expedition.

I'm thinking about going for a pedicure.  It was going to be my reward to myself for losing 20 pounds.  Of course, I didn't quite make it to 20 before our little halfling moved in.  So I think, perhaps in celebration of getting to the second trimester in a couple weeks, I might splurge and go to a local spa.  It's been years since I've had a pedicure.  My tootsies need some tlc.

The Fog is Lifting (aka The Self-Analysis Post)

Well, Humble Readers... it seems that the fog, and the funk, is clearing.

Is it because it has finally stopped snowing? (Yes, that's right. Here on the northern flatland, we had an early taste of winter. This has been the coldest October in almost 25 years... and of course it followed the hottest September on record. Go figure!) Is it because the thermometer is closer to normal temperatures for this time of year?

Is it because I have just spent two hours baking? (One batch of glazed pumpkin chocolate chip cookies and two loaves of cinnamon loaf. Peanut butter chocolate bars are being made tomorrow.)

Or maybe it's because I'm getting close to O time and maybe my hope is creeping back in?

Or maybe it's just the new cd I got the other day... there is a tonne of power in getting a musical soundtrack that I don't already know by heart.

Whatever it is, I'm glad! I wasn't enjoying being in my head so much. I'm starting to feel like me.

When I let my rational self think about how things went last month, many things become clear. First, I was putting way to much pressure on myself. It's only our first month officially trying again after our break. I know that getting pregnant isn't our issue. It will happen, eventually.

Second, I fell victim to the stupid idea that somehow being on vacation might help make things happen. Really... how ridiculous? How many times have I rolled my eyes when someone gave me that assvice?

Last... I always have a bit of a slump around my birthday. From the time I was 16, every year around my birthday I get a bit blue. I think being on vacation on my birthday delayed the inevitable.

So, when my cycle chose this last month to screw around on me, it was just crappy timing all the way around.

Hobbit-ish Potpurri

Good evening Humble Readers! I am overwhelmed by the number of visitors my little corner of the internet has attracted over the last couple of days! I love ICLW! Unfortunately, I have nothing big to talk about tonight... just a few things to mention.

We went and saw Harry Potter 6 tonight. It was good, funnier than I would have expected knowing the book. But I was saddened by how much was left out, and how much they added to the story that was just not necessary. Of course I cried towards the end. I'm going to have to reread book 7 now.

One for the insanity file: I baked cookies last night. Now, you may be asking what is so insane about baking cookies? Well, the insanity comes in when you decide to promise your staff homemade cookies if they achieved a particular level of donations to our chain's in house charity. They did it (yay team!) and I was on the hook for cookies... homebaked cookies... in July... during the hottest week of the year... in a non-airconditioned condo. I made flourless peanut butter chocolate chip cookies (for the gluten free staffers) and pumpkin chocolate chip cookies (for the staffers with nut allergies). And sweated buckets in the process.

I'm working all opening shifts for the rest of the week... 7am... not fun! I am not a morning person, and having to get up at 5:30 just sucks. I was so grouchy at work this morning I almost ripped both my least and most favourite staff members a new one... And I'm known as the 'nice' manager. *sigh*

My Beloved's 20th high school reunion is this weekend. 20 years! Holy cow! I need to get a hair cut and colour sometime in the next couple of days.

To add to my crankiness from having to be up at the butt-crack of dawn this morning, I wanted to order chinese food tonight. I called our usual place... and they were CLOSED! In the middle of the summer! They are closed for vacation. Whoever heard of a restaurant closing for two weeks for vacation? We ended up having KF.C instead, and now my fingers are puffed up like sausages.

Heat lightning is flashing across the sky tonight. It's been crazy hot for the last couple of days, and it's supposed to last through the weekend. This hot weather has brought out the ridiculous in terms of my customers' wardrobes. If you are going to wear a tube top of any sort... please get yourself a strapless bra! The only thing more disturbing than seeing a woman my size walking around without a bra is seeing one wearing a tube top, with a sports bra on underneath! And gents... if you are wearing white shorts, please don't wear black briefs underneath.
